Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 2 cups salsa
  • 9 lasagna noodles
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet, brown the ground beef over medium heat until fully cooked.
  • Drain excess fat, then add taco seasoning, black beans, corn, and salsa. Stir to combine.
  • In a baking dish, spread a thin layer of the beef mixture at the bottom.
  • Place 3 lasagna noodles on top of the beef mixture.
  • Spread half of the remaining beef mixture over the noodles.
  • Add a layer of sour cream and sprinkle with 1 cup of cheese.
  • Repeat layers: noodles, beef mixture, sour cream, and cheese.
  • Top with the final layer of noodles, remaining salsa, and cheese.
  • Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
